Family Fun Recipes is a series from being808 that encourages parents and children to prepare and enjoy healthy snacks together. In this installment, Health Rebel blogger Jillian Campbell Scheibe gives a demonstration on making fruit pops.
Ingredients (4 servings):
- 1 cup of blueberries
- 1 cup of blackberries
- 1 cup of strawberries
- ½ cup of coconut milk
If any of the ingredients are frozen, allow them to thaw in room temperature for about 20 minutes. When arranging the fruits in the blender, place the larger items at the bottom, closer to the blade. After adding the coconut milk, blend the ingredients on a high level, as if making a smoothie. The consistency should be thin, but add water if it’s not.
During the mixing, your children can begin drawing on their cups and popsicle sticks. The mixture can then be poured into the cups, along with the newly labeled sticks, and placed in the freezer for 2 hours.
Once frozen, a trick to removing the frozen pop from its cup is to place it under warm running water. Gently pull the stick and the pop should easily slide out from the cup.
Families are encouraged to try variations of the recipe – experimenting with seasonal berries and other fruit, for example. By allowing children to choose their favorite fruits and freely decorate their serving utensils, they’ll forget their frozen treat is actually a healthy one.
