Family Fun Recipes is a series from being808 that encourages parents and children to prepare and enjoy healthy snacks together. In this installment, Health Rebel blogger Jillian Campbell Scheibe demonstrates a healthy take on mud pudding.
Many parents are wary of serving the popular treat due to its high sugar levels. Jillian, a nutrition consultant and holistic wellness coach, recently demonstrated how to transform the guilty pleasure into a healthy snack. The trick is replacing tofu for the pudding, but shhhh… don’t tell the kids.
Ingredients (4 servings):
- 1 box silken tofu
- 1 tablespoon of vanilla extract
- 1 ½ cups of chocolate chips
- ½ cup of berries
- chocolate graham crackers
- 1 tablespoon of honey (optional)
First, crush the graham crackers into small chunks and pour along the bottom of the serving cups or a pie dish. Heat the chocolate chips in a microwave oven and stir every 45 seconds to a minute to prevent burning.
Depending on the wattage of your microwave, the chocolate should be melted in about 2 minutes. Mix the tofu, vanilla extract, and berries in a blender on a medium setting. Once the chocolate is melted, add it to the other ingredients in the blender, blend until it’s even, and pour the mixture over the graham cracker chunks.
Leave a layer of chocolate graham cracker crumbs along the top to create a crust. The dish can be eaten right away as a pudding or it can be placed in the refrigerator for a few hours for it to thicken into a mousse.
